Savita's Egg Curry

    This is a quick and easy curry to make! You can make the base seperately and even make a chicken curry out of it! Being a vegetarian who eats eggs, I often add boiled eggs and peas for myself and saute some chicken on the side and make a chicken curry for my family since they do not like boiled eggs in a curry! I hope you enjoy it as much as I do!

    Serves: 4 

    • 4 Eggs
    • 2 tsp oil
    • 1 onion finely chopped
    • 1/2 tsp cumin seeds
    • 1 tsp coriander powder
    • 1/4 tsp black pepper
    • 3 cloves
    • 1 bay leaf
    • 1 pinch nutmeg
    • 3 tsp coconut powder or finely grated coconut
    • 2 tsp Amchoor
    • 1 cup peas
    • 3 tsp tomatoe paste
    • 2 cups skim milk
    • 1/2 cup water
    • 1/2 tsp red chilli powder
    • 2 sprigs coriander leaves
    • 4-5 cashew nuts
    • 1 garlic clove minced
    • 1 inch ginger minced

    1. Boil the eggs for 10 mins, place in cold water for a few seconds , peel and cut into pieces.
    2. While the eggs are boiling, boil peas in another pan for 10 mins and drain.
    3. While the peas are boiling, place oil in a pan and saute oinions for 2 mins,
    4. Add the spices along with the tomatoe paste and saute for 2 mins,
    5. Add the skim mikk and water and let it simmer for 6 mins.
    6. Add the boiled peas and boiled eggs and let it simmer for 5 mins.
    7. Garnish with cashew nuts and and coriander leaves.

    Serving suggestion

    This dish tastes good with rice or roti.
