Heat a tawa with 1 tablespoon vegetable oil. Roast besan with salt, red chilli, haldi and coriander powders. Mix in 1 tablespoon of water. Stir and mix well. Set aside.
Peel the skin of each pointed gourd. Then make a slit in the middle of the gourd. Clear out the inside of the gourd, and then stuff it with the fried besan mixture. Close the gourd. Repeat for the rest of the gourds.
Heat a pan with rest of the vegetable oil. Shallow fry the gourds.
