Methi ki subji
This is a nutrient rich fenugreek based stir fried dish. Serve with chapattis.

2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon asafoetida
1 onion, chopped
2-3 green chillies, chopped
1 cup methi (fenugreek) leaves, chopped
Salt as needed
- Heat a frying pan with oil. Add mustard seeds and asafoetida.
- Add onions, stir and fry until the onions turn pink.
- Then add chopped green chillies. Mix.
- Add methi leaves and salt. Stir and put the lid on. Cook on low heat until the leaves wilt and the spices have mixed well.
