Methi ki subji

    This is a nutrient rich fenugreek based stir fried dish. Serve with chapattis.

    Serves: 3 

    • 2 tablespoons vegetable oil
    • 1 teaspoon mustard seeds
    • 1 teaspoon asafoetida
    • 1 onion, chopped
    • 2-3 green chillies, chopped
    • 1 cup methi (fenugreek) leaves, chopped
    • Salt as needed

    1. Heat a frying pan with oil. Add mustard seeds and asafoetida.
    2. Add onions, stir and fry until the onions turn pink.
    3. Then add chopped green chillies. Mix.
    4. Add methi leaves and salt. Stir and put the lid on. Cook on low heat until the leaves wilt and the spices have mixed well.
