About this recipe:
This is shev puri, which is a crunchy and delicious street snack. It is served with ambar khajur and spicy chutneys.
2 cups vatana
1/2 teaspoon haldi
Salt as needed
2 teaspoons ambar-khajur chutney
4 teaspoons water
1/2 teaspoon spicy chutney
1 onion, diced
1 tomato, chopped
2 boiled and peeled potatoes, cubed
1/2 cup chopped coriander leaves
2-3 tablespoons dahi or yoghurt
- Boil the vatanas with haldi and salt. Set aside to cool.
- In a bowl, mix the ambar khajur chutney, water and spicy chutney.
- Fill each puri with the chutney sauce and a little bit of the cubed vatana, onions, tomatoes, potatoes and coriander leaves. Repeat for the rest of the puris.
- Add a few drops of dahi in each puri.
