    About this recipe: This is shev puri, which is a crunchy and delicious street snack. It is served with ambar khajur and spicy chutneys.

    Ingredients
    Serves: 2 

    • 2 cups vatana
    • 1/2 teaspoon haldi
    • Salt as needed
    • 2 teaspoons ambar-khajur chutney
    • 4 teaspoons water
    • 1/2 teaspoon spicy chutney
    • 10 puris
    • 1 onion, diced
    • 1 tomato, chopped
    • 2 boiled and peeled potatoes, cubed
    • 1/2 cup chopped coriander leaves
    • 2-3 tablespoons dahi or yoghurt

    1. Boil the vatanas with haldi and salt. Set aside to cool.
    2. In a bowl, mix the ambar khajur chutney, water and spicy chutney.
    3. Fill each puri with the chutney sauce and a little bit of the cubed vatana, onions, tomatoes, potatoes and coriander leaves. Repeat for the rest of the puris.
    4. Add a few drops of dahi in each puri. Serve.
