    Jarda is a dessert made from sweetened rice. It is a traditional dessert item, and a must for any Bengali weddings.

    Serves: 5 

    • 1 tablespoon jafran/saffron
    • ½ cup milk
    • 2 tablespoons rosewater
    • 4 cups basmati rice
    • 4 cups sugar
    • ¾ cup orange juice
    • 1 and ½ cups ghee
    • ¼ cup raisins
    • 6 pieces cardamoms
    • 4 cinnamon sticks
    • 1 and half cups mawa powder
    • ½ cup cashew nuts, sliced
    • 1 cup Malai

    1. Soak jafran in rosewater and milk. Set aside.
    2. Wash the rice and boil it. it should take about 20 minutes. Drain the water out.
    3. Mix sugar with orange mix. This will remove any dirt in the sugar. Drain the syrup through a muslin filter and collect it.
    4. Heat a saucepan with ghee. Add raisins, cardamoms and cinnamon sticks. Fry and add the boiled rice and sugar syrup. Mix in the saffron and fry for a bit.
    5. Add the mawa and cashew nuts. Mix and add the malai and serve.
