Broccoli Rabe Frittata


    With party season soaring high it is that time of the year to treat your guests with the tastiest and the most interesting recipes. Here is a delightfully appetizing recipe of Broccoli Rabe Frittata to serve your guests on party.

    • Olive Oil - 1 tbsp
    • One red onion – Chopped finely
    • One small orange bell pepper chopped
    • Chopped oil cured sun dried tomatoes – 1 tbsp
    • Fresh Rosemary minced – 1 tbsp
    • Chopped broccoli – 2 cups
    • Minced garlic cloves – 4
    • Large egg whites - 4
    • Large whole eggs – 3
    • Shredded Swiss or Gruyere cheese – ¾ cup


    1. Preheat the oven. Take a 10inch pan and grease it evenly. You can use a cooking spray for greasing the pan evenly.
    2. Heat the oil in the pan at medium heat. Add onion, bell peppers, sun dried tomatoes and rosemary and sauté it for 10 minutes. Add broccoli into the pan and cook for at least ten minutes.
    3. Take a large bowl. Whip together in it the egg whites as well as the whole eggs. Add 1/3 cup water in the bowl and stir again. Slowly stir in cheese to the mixture.
    4. Pour the egg mixture of the vegetables in the pan and then cook it for 2 minutes.
    5. Use a rubber spatula to gently pull the edges of frittata toward center of pan so that it is cooked immediately.
    6. When egg mixture sets completely place the pan in the oven broiler for another 2 minutes or until the top is set and has puffed up a little. You will notice that the top of the frittata will assume a light brown color.
    7. Bring the frittata out of the oven and let it stand for 5 minutes. Then run the spatula along the edges and slice into wedges to serve it to your guests.


    You can also cook the same recipe on your stove top or broiler.
