Mishti doi (Mitha Dahi)

    Mishti doi is a fermented sweet dahi (Curd). Mitha Dahi is a popular dessert in the states of West Bengal, Odisha and Bangladesh. It is prepared by boiling milk until it is slightly thickened, sweetening it with sugar or jiggery, and allowing the milk to ferment overnight.     • Milk (Full cream) 1 liter
    • Yogurt 1/2 tsp
    • Sugar 1 cup


    1. Boil the milk in a heavy-bottomed pan, on a medium flame till it is reduced to half its original volume. Stir frequently.
    2. Put the sugar in another pan and heat over a low flame to melt. Allow the sugar to caramelize (brown). Remove from the fire when done, add the reduced milk to this caramelized sugar and mix well to blend.
    3. When the milk and sugar are mixed, add the yogurt to the mixture and stir gently to mix.
    4. Set overnight in a warm place. Chill when set. Serve chilled.
