    About this recipe: These date balls make a high energy snack, perfect with an afternoon cuppa chai. They freeze well and keep for weeks in the fridge.

    Ingredients
    Serves: 12 

    • 30g butter
    • 275g dates, pitted and chopped
    • 125g icing sugar
    • 2 eggs, beaten
    • 1/4 teaspoon salt
    • 75g crispy rice cereal
    • 50g chopped walnuts
    • 1 teaspoon vanilla essence
    • 150g desiccated coconut

    Directions
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Using a double boiler, heat butter, chopped dates, icing sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
    2. Add crisp rice cereal, chopped walnuts and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.

    Directions for this recipe are incomplete! Cooking time is NOT given and is a very important function of the recipe. As written this recipe will NOT turn out, it is impossible to roll these into balls. Butter, sugar, etc. must be cooked to a firm ball stage.  -  21 Dec 2000  (Review from Allrecipes US | Canada)
