    About this recipe: A hearty and flavourful pasta dish, ready in just adha ganta!

    Ingredients
    Makes: 4 

    • 1 (500g) packet penne pasta
    • good knob butter
    • 1/2 red onion, chopped
    • 2 cloves garlic, minced
    • 500g skinless, boneless chicken breast fillets - chopped
    • 1 (400g) tin artichoke hearts in water, drained and chopped
    • 1 tomato, chopped
    • 75g feta cheese, crumbled
    • good handful chopped fresh parsley
    • 2 tablespoons lemon juice
    • 1 teaspoon dried oregano
    • salt and freshly ground black pepper to taste

    1. In a large pot with boiling salted water, cook penne until al dente. Drain.
    2. Meanwhile, in a large frying pan over medium high heat, melt butter and add onion and garlic. Cook for 2 minutes. Add chopped chicken and continue cooking, stirring occasionally until golden brown, about 5 to 6 minutes.
    3. Reduce heat to medium low. Add artichoke hearts, tomato, feta cheese, fresh parsley, lemon juice, dried oregano and drained penne to the large frying pan. Toss and cook until heated through, about 2 to 3 minutes.
    4. Season with salt and black pepper. Serve warm.
