Remove the seeds from the apricots. Soak the apricots in water for 4 – 6 hours or overnight. Save the water
Crack the seeds to take out the almond-like nuts. Blanch the nuts in some hot water. Remove the peel and roast the nuts to bring out the flavour. Make sure you taste the nuts. Some varieties of apricots have bitter nuts.
Cook the apricots in the soaking water alongwith sugar and lemon juice till the apricots are soft and the syrup is rich and thick. Chop the nuts coarsely and add to the apricots. Save some nuts for garnish.
Serve qubbani ka meetha hot or cold with cream, or vanilla ice cream.
