Best Chocolate Walnut Muffin

    Rich and nutty, these chocolate muffins are great as breakfast or tea time snack. Pull up a chair in the veranda and watch the rain come down with these in one hand and a cuppa chai in the other.

    • 250g plain flour
    • 50g cocoa powder
    • 300g caster sugar
    • 1/2 teaspoon bicarbonate of soda
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 300ml milk
    • 1 egg
    • 2 tablespoons vegetable oil
    • 1 teaspoon vanilla essence
    • 175g chocolate chips
    • 75g chopped walnuts
    • 50g whole almonds
    • 4 tablespoons brown/demarara sugar

    1. Preheat the oven to 180 C. Grease muffin tin or line with paper muffin liners.
    2. In a medium bowl, sift together flour, cocoa, sugar, baking powder, bicarbonate of soda and salt. In a large bowl combine milk, egg, oil and vanilla. Mix dry ingredients to large bowl; mix well. Add chocolate chips and walnuts, stir well.
    3. Fill muffin liners 3/4 full. Poke almonds into tops of unbaked muffins. Sprinkle muffins with demerara sugar. Bake for 20 to 25 minutes, or until a skewer inserted in centre comes out clean.
