About this recipe:This no cook, cold, garlicky soup is ready in just 30 minutes. Great with herb bread for a hot summer eve snack sitting under the stars.
2 tablespoons ground almonds
50g toasted breadcrumbs
5 cloves garlic
sea salt to taste
2 tablespoons olive oil
1 tablespoon white wine vinegar
6 cubes ice
500g seedless green grapes, peeled

Pound almonds, breadcrumbs, garlic and salt together in a mortar to form a paste. Gradually mix in oil. Stir in vinegar. Place mixture in a bowl/tureen. Stir in water, ice and grapes. Let rest in a cool place 30 minutes before serving.
Note: Use a medium orange melon instead of grapes, sliced into bite sized pieces.
