Orange Apricot Bread

    Ready in just 40 minutes, it smells fantastic while it is baking. Serve with cuppa chai.

    Serves: 12 

    • 80g raisins, chopped
    • 30g or 2 tablespoons of chopped dried apricots
    • zest of 1 orange
    • 2 tablespoons orange juice
    • 120g caster sugar
    • 50g butter
    • 1 egg, beaten slightly
    • 250g self-raising flour
    • 180ml milk

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 degrees C.
    2. Lightly grease a 23x12cm (9x5 in) loaf tin.
    3. In a small bowl, combine raisins, apricots, orange zest and orange juice. Let stand for 10 minutes.
    4. In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour mixture into the prepared tin.
    5. Bake in preheated oven for 40 to 45 minutes, or until a skewer inserted into centre of loaf comes out clean.
    6. Serve sliced and buttered with a pot of tea.

    A Enjoyed this bread very much. It had great flavor. I made it exactly as the recipe called for. The only thing I'll do differently next time is add more apricots. And thats only because I prefer more fruit in my fruit breads.  -  15 Jan 2003  (Review from Allrecipes US | Canada)
