Easy Apple Cake

    Apples and walnuts in a delicious cinnamon flavoured cake!

    Serves: 8 

    • 250g plain flour
    • 2 teaspoons ground cinnamon
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 300g caster sugar
    • 1 teaspoon vanilla extract
    • 3 tablespoons water
    • 200ml light oil
    • 3 eggs, lightly beaten
    • 3 apples, peeled, cored and quartered
    • 125g chopped walnuts

    1. Pre-heat oven to 190 degrees C. Grease a 9 inch / 23cm cake tin.
    2. Sift together the flour, cinnamon, bicarbonate of soda and salt.
    3. Add in sugar, vanilla, water, oil and eggs; mix until well-blended.
    4. Stir in apple quarters and chopped walnuts.
    5. Pour into tin and bake for 50 minutes or until a knife inserted into the middle comes out clean.
    6. Cool on a wire rack before serving.
