Irish Fruit Cake

    This 'boiled' cake is named for the assorted dried fruits boiled with sugar and butter and then baked with the batter.

    Serves: 12 

    • 250ml water
    • 900g dried mixed fruit
    • 225g caster sugar
    • 170g butter
    • 230g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon of mixed spice
    • 2 eggs, beaten

    1. Preheat the oven to 150 C. Grease a 450g cake tin, and line with foil.
    2. Combine the water, dried fruit, sugar and butter in a saucepan over medium heat. Bring to the boil, stirring occasionally, and boil gently for about 10 minutes.
    3. Sift the flour, bicarbonate of soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs.
    4. Pour into the greased cake tin.
    5. Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean.
    6. Cool cake in the tin for at least 10 minutes before removing.

    This is very yummy! Note: For those of us that can't find 'mixed spice' I found a recipe for it. 1 tablespoon cinnamon 1 tablespoon nutmeg 1 tablespoon allspice 2 teaspoons mace 1 teaspoon ground cloves  -  15 Mar 2007  (Review from Allrecipes US | Canada)


    I made this recipe today as a surprise for my husband. It really appealed because I don't like the booziness of some fruit cakes and this didn't have any! It took about 15 minutes from starting to get it in the oven including boiling time. I have to agree with others that have said it won't fit into a 1lb loaf tin - I used a 20cm round tin and it was perfect! I only used 500g dried fruit mix as thats all I had but that is more than adequate. We like a lot of spice so I added 3tsps of mixed spice and also 3tbsp's of golden syrup with fantastic Christmas flavour results, might even add more next time as it was still quite mild. I don't usually like fruit cake but this is simply wonderful. It's moist, heavy and beautiful. I'm going to purchase some more fruit mix and make a few more cakes for friends and family. Fantastic recipe and has been added to my favourites, it's one that will be used year after year after year... I'd like to add also that this will be used as Christmas Cake for us. A real money saver as well as delicious! MARGE:--- If you feel like using the amounts in my review and the 20-22cm round tin, my cake was cooked in exactly 90 minutes at 150C.
