Sarson Ka Saag

    This is a delicious smooth and sultry Punjabi speciality which is a little time consuming so I don't make it too often but I love it!!

    Serves: 10 

    • 2 bunches broccoli
    • 4 bunches mustard greens (sarson ka saag)
    • 3 bunches spinach
    • 3/4 cup ginger minced
    • 2 cloves garlic
    • 3 green chillies
    • 3 tomatoes
    • 2 onions
    • 3 tsp salt
    • 4 tsp oil
    • 2 tsp whipped butter
    • 4 tbsp corn meal (makke ka atta)

    1. Cut the spinach,broccoli and mustard leaves and green chillies and cook in the pressure cooker for 1 hour with 1 cup of ginger.
    2. While the pressure cooker is on, place the chopped tomatoes,onions,remainder of the ginger and garlic in a pan and saute it in oil for 5 mins till light brown.
    3. After the pressure cooker contents are cooked, mash the contents with a hand blender and then add corn meal to it and mix well so as not to form any clumps.
    4. Let it simmer on low heat for 15 mins and then add the tomatoe onion mixture to it stirring constantly to make sure it does not burn or the contents do not stick to the bottom of the pot.
    5. Let it simmer for 45 more mins.
    6. Add whipped butter to it and serve.
    7. Note: Broccoli is my personal input to make this dish even healthier. In Punjab we don't use it, it's a new addition to India.

    Serving suggestion

    Serve with corn roti(makke ki roti) and raita.
