Asan Microwave Lemon Curd

    Tangy, sweet lemon curd, great for dipping fruit in or with jelly or by itself! It's a foolproof recipe, ready literally in minutes.

    Ingredients
    Makes: 2 (450g) jars

    • Juice and finely grated rind of 4 large lemons
    • 175g unsalted pastuerized butter (no substitutes)
    • 175g caster sugar
    • 4 large eggs, well beaten (as fresh as possible)

    Directions

    1. if you want to store this dish, put 2 clean 1/2 kg glass jars to warm in a slow oven while you make the curd. If not, just skip to step two.
    2. Put the lemon juice and rind in a microwave-able bowl. Stir in the sugar and butter, cut into small pieces.
    3. Heat on full power, stirring often, until the butter and sugar are melted but the liquid is not too hot.
    4. Whisk in the eggs vigorously in a thin, steady stream until very well combined. Give the whole lot a quick whisk.
    5. Microwave on full power for 2 minutes without opening the door. Remove and whisk very well. Allow to stand for 1 minute. Microwave on full for another 1 minute.
    6. Spoon into the warmed jars. Allow to go completely cold before sealing. Store in the refrigerator for up to 1 week.

    Made this for the first time a couple of weeks ago....followed the recipe to the letter....and ended up with big lumps of cooked egg whites (yes, my eggs were fresh, collected half an hour before from my own hens!) Think depending on the power of your microwave (mine is a 900) the mixture is too hot to add raw eggs to without them scrambling!! Managed to salvage it by putting it through a sieve, but also lost all of the lemon zest, so not a very lemony flavour!! Decided to try again yesterday, but this time I melted the butter previously, then mixed the sugar, eggs, lemon zest and juice together before adding the butter. Cooked for 2 mins, mixed it, cooked again for 2 mins, mixed it again, cooked for 1 min.....and it came out perfect!!  -  28 Apr 2013  (Review from Allrecipes UK | Ireland)
