About this recipe:A regular dish when prepared in an offbeat manner and served up in style at the dining table springs a delightful surprise and is much enjoyed deliciously! Here is an interesting recipe of roasted cauliflower when decked with lemony brown butter that can not only serve a healthy vegetarian meal for home dinning or can be used for gatherings as well.
1 small head cauliflower with it’s leaves removed and stem trimmed (1¼ lb.)
4 large garlic cloves that are quartered
1 medium yellow onion which is quartered
1 ½-inch piece peeled ginger which is cut into thin matchsticks
¼ tsp.of whole cloves
2 tsp. of salt
1 ½ Tbs. plus ⅛ tsp. curry powder which is finely divided
¼ tsp. whole of black peppercorns
2 tsp. olive oil
3 2 tsp. of dark rum, optional
Tbs. of golden raisins
1 Tbs. of lemon juice
3 Tbs of unsalted butter
½ tsp. of grated lemon zest
Take a whole cauliflower head and a sauce consisting of brown butter sauce. Immerse the cauliflower head in the sauce till it is infused with all the aromatic flavors and then roast it till it is golden brown in color
The preparation of the Roasted Cauliflower involves preheating the oven to 450°F. Coat the baking sheet with cooking spray. Using microwavable cookware, the heating can be done in a microwave as well. combine 8 cups of water with garlic, onion, ginger, 11/2 Tbs. curry powder, cloves, peppercorns and salt in a large pot and heat it to boil.
Next add the cauliflower with it’s stem side up, and simmer for 15 minutes, or till it is slightly softened.
After that , drain, and pat dry. Apply oil on the cauliflower and rub it and then season with salt and pepper, if desired.
Place the cauliflower on prepared baking sheet stem with it’s side down, and then roast it for 35 to 40 minutes, or until it’s crisp and brown on top. You can use microwavable glassware that will greatly help in the process as well
Meanwhile, the preparation of the Lemony Brown Butter requires : Heating butter in a small saucepan over medium-high flame for 4 minutes, or until milk solids begin to brown. Then add raisins and rum and cool for 3 minutes. Next stir in lemon juice and zest.
Next slice the cauliflower, and sprinkle it with remaining 1/8 tsp. curry powder. Drizzle it with the prepared Lemony Brown Butter.
Having the roasted cauliflower with lemony brown butter ready, serve it in a My Borosil serving plate as it enhances the ambience and lends an elegant touch to the dining experience!
