Fried Eggplant Roundels/ Baigana Bhaja

About this recipe: An integral part of an authentic Odiya Meal, golden ,Fried Eggplant Roundels or Baigana Bhaja in Odisha.The Eggplant is cut into slices,marinated in turmeric ,salt and chilli powder and deep fried or shallow fried in Mustard oil.Its an accompaniment with Rice,dal and curry and is a hit with Puris and a comfort food with Khichdi.The mustard oil imparts a distinct flavour to the dish.

  • 02 round variety eggplants/ brinjals
  • 2 tsp Turmeric
  • 1 tsp chilli powder
  • 1 tsp salt/ according to taste
  • 3-4 tbsp Mustard oil


  1. Wash and dry the eggplants,slice them into 1/2 inch thick roundels.
  2. Marinate with salt,turmeric and chilli powder ,smear it uniformly and keep it marinated for 15-20 mins.
  3. Heat the mustard oil in a wok till smoke emanates from it and lessen the heat.
  4. Shallow fry the marinated roundels in medium flame or alternately deep fry in more oil.
  5. Cook both the sides till nice and brown.
  6. Serve hot.


The fried slices wilt and lose shape when cold,try to serve when it's hot and crisp.
