Chilli Garlic Prawns

    It really is very easy, its really quick and it's absolutely lipsmackingly delicious! Prawns work with pretty much most ingredients and simpler the recipe, the more the sweet taste of the prawns shines through. I was actually testing a new grade of prawns we were sourcing for Fishvish and well... I had use it up - cant re-freeze thawed out prawns can I? I had only thawed out 250 gms of the entire Kg and figured the quick and simple would be a stir fry. Chilli Garlic Prawns it was. It's not a "classic" chilli garlic I suppose but it was absolutely smashing! Here it is.

    • 250 gms cleaned peeled and deveined prawns (if frozen, thaw completely, rinse and pat dry)
    • 1/2 tsp Red Chilli Powder (more if you want more heat)
    • A pinch of black pepper (ideally freshly ground)
    • Juice of 1 lemon
    • Salt to taste
    • 1 Medium sized Onion very finely chopped
    • 6 Cloves of fresh garlic, very finely chopped
    • 2 tbsp Groundnut oil (ideal but use whats available at home)


    1. Mix the red chilli powder, crushed black pepper, lemon juice and salt.
    2. Marinate the prawns in this mixture for 10 minutes.
    3. Heat the oil in a pan on high heat
    4. Add the onions and saute until translucent
    5. Add the garlic and saute for another 30 seconds
    6. Toss in the prawns and cook on one side for about 1 minute (high heat)
    7. Turn over using tongs and cook for another minute (high heat)
    8. Voila! Plate, pour any left over juices in the pan over them and serve hot!
