About this recipe:I use to think it is extremely difficult make moist, delicious cake without the use of eggs....however having tried my hand at baking for couple of years and with all the experiments in my kitchen I finally made this perfect cake with easy ingredients and easy method of preparation.
In a mixing bowl add all the dry ingredients (Sift the flour), mix well.
Now add oil and use an electric hand blender to blend the ingredients well. Add milk slowly to this mixture( little at a time). Once all the milk has been added, the texture of the batter will be smooth and thin. Add essence and give it one last mix
Now preheat the oven for about 5 minutes
Grease the baking pan and pour the batter in it, let the batter rest in the pan for 5 to 10 minutes before placing in the oven
Let it bake at 350 degree F for about 20 to 25 minutes.
Insert a toothpick in the center and see if it comes out clean. If it does your cake is ready.
the batter consistency has to be thin in eggless cake as this will give you moist , spongy cake.
