Sabudana/Sago Vadas

    Sabudana/Sago vada is a traditional deep fried snack from Maharashtra, India. I happened to taste one of the yummiest and truly authentic sabudana vadas from a restaurant in Chennai. I wanted to replicate the same. Though i wasn't able to achieve the same taste, it was good and loved by everyone at home.

    • Sabudana/Sago- 200 gms
    • Potato-2 medium
    • Peanuts-1/2 cup
    • Coriander leaves-1/2 cup
    • Green chillies-3
    • Cumin/Jeera powder-2 tsp
    • Lime juice-1 tsp
    • Salt- As required
    • Sugar-1/2 tsp
    • Rice flour(optional)-2 tsp
    • Oil- To fry


    1. Soak sabudana in water for 4-5 hours.
    2. Roast peanuts in tawa and grind it coarsely.
    3. Boil and peel the potatoes and mash them nicely.
    4. In a bowl mix sabudana, powdered peanuts, mashed potatoes, Coriander,Green chillies,cumin powder, sugar,rice flour and mix well.
    5. Add salt as required and add 1 tsp of lime juice and mix well.
    6. Make small balls out of the dough made above and flatten it on your palm into round vadas.
    7. Fry the vadas in oil until golden brown.
    8. Serve hot with mint/sweet chutney or tomato ketchup.


    Do not soak the sabudana/sago pearls for more than 5 hrs as it would turn soggy. You can add a pinch of chat masala or dried mango powder as per your liking.
