    About this recipe: West Africans love these fried green banana chips. Great alone or with a spicy rice and curry dish.

    Serves: 2 

    • 1 ripe plantain, peeled and sliced diagonally 6mm thick
    • groundnut oil for frying

    Prep:2min  ›  Cook:5min  ›  Ready in:7min 

    1. Heat a good glug of groundnut oil in a frying pan over medium-high heat. Fry plantain slices until golden on each side. Serve whilst still warm.
