Makes: 425 grams

  • 50g aniseed
  • 50g aniseed pepper
  • 25g cloves
  • 50g coriander seeds
  • 50g cumin seeds
  • 50g allspice
  • 50g ground ginger
  • 50g tamarind pods
  • 50g fennel seeds

  1. Combine all ingredients in a coffee or spice grinder and grind to a smooth powder. Store in an air-tight jar, using as required.
