Home Style Dum Aloo
Home style dum aloo recipe is one of the definitive Indian dishes. Home style dum aloo is basically- Fried baby potatoes smoldered in smooth, creamy onion tomato and yogurt gravy. Potatoes are deep fried to give a very gentle & melt in the mouth texture. They also captivate aroma and taste of the gravy when they are seethed in the curry and taste delightful. It can be served with plain basmati rice, jeera rice, plain paratha, puri, naan or roti.

20-25 small baby potatoes- 250 gms small baby potatoes
Oil as required for frying
1 cup finely chopped onions
1 ripe large tomato deseeded
10-12 cashew nuts
1 tbsp oil
1 green chilli- slit
1 tsp ginger garlic paste
Salt as per taste
1 tsp kashmiri chilli powder
1 tsp turmeric powder
1 tsp coriander powder
1/4 tsp garam masala
2-3 tbsps plain yogurt
Few chopped coriander leaves
Wash and peel potatoes. Make sure all baby potatoes are of the same size. Puncture or prick them them with a fork to make sure they get cooked from inside as well.
Make a fine paste of onions, cashews and tomatoes.
Heat a pan with oil, and saute bay leaf and cardamom.
Add ginger garlic paste.
Add the onion tomato paste and cashew paste. Sauté until the raw smell goes away and the paste sets to some extent.
Add curd and mix it well until it turns thick.
Add fried potatoes along with 1-2 cups water. Stir well and bring the mixture to a boil.
Cover and cook on a low heat for 7 -10 minutes. Make sure the gravy is quite thick and potatoes are completely cooked.
Stir and cook for another few minutes. Switch off.
Pepper it with few coriander leaves. Shortcut
You can also use lemon juice instead of Yogurt. Dont add both though.
