Roll out the pastry to a 40x30cm rectangle. Spread the mincemeat out thinly onto pastry. Roll pastry into a log. Cut into 2 to 3cm slices.
Place rounds on lightly greased baking tray and press down on each to flatten slightly. Sprinkle the sugar onto each round. Bake for 20 minutes at 180 C, checking regularly to see that they do not burn.
Let pinwheels cool for 5 minutes before removing from tray.
