About this recipe: A cake made with your favourite chai and dried fruits.


Serves: 20 

  • 350ml brewed tea, cooled
  • 200g soft brown sugar
  • 340g mixed dried fruit
  • 300g self-raising flour
  • 1 egg

  1. Add sugar and mixed fruit to the cold tea and leave to soak overnight.
  2. Add flour and egg to the tea mixture and stir until the mixture is smooth.
  3. Line a loaf tin with foil and pour the mixture in.
  4. Bake in a 180 C oven for 90 minutes. Towards the end of baking, check every 10 minutes with a knife to see if all mixture is cooked.
  5. Once cooled, slice and serve topped with butter.
