Rice Boondi Payasam

    A special kind of sweet (payasa) prepared in the coastal regions of Karnataka. We also call it 'Sarnyada Adya'.

    Serves: 4 

    • 1/4 Kg rice
    • 4 cups thin coconut milk
    • 3/4 cup grated jaggery
    • 4 cups thick coconut milk
    • 1 tsp cardamom powder
    • a pinch of salt (to taste)

    1. Wash rice and soak for one hour. Grind to a fine paste. You can add a pinch of salt now or later, with thin coconut milk.
    2. Take the thin coconut milk and jaggery and boil the mixture.
    3. When it boils, add the rice mixture through the boondi spoon (a spoon or a vessel with holes). Put all the rice mixture and boil for 10 minutes. keep stirring while it boils.
    4. Then add the thick coconut milk and when it starts boiling, put off the flame and add the cardamom powder. Serve.
