Dry chili fry

    This is an alternative to regular pickles. This is a method of preserving green chilies and then deep frying them to be eaten as a comfort food along with rice or porridge.

    Makes: 1 kg

    • 1 kg Green chilies
    • 1 cup Sour curd
    • 1/4 cup Salt

    1. Using a knife or any sharp object make very thin, long tears on the chilies without tearing them apart. Now pour sour curd and salt on it. Mix well and spread them out to dry under sun.
    2. Dip it in curd-salt mixture again the next day and let dry under the sun. Repeat this process until the chilies are totally dry without any moisture. Preserve in an air tight container.
    3. Deep fry whenever required.
