Tomato rice

    This is a tasty preparation popular in Tamilnadu. Easy to make, without compromising on taste and very filling too.

    Serves: 2 

    • 1 cup Raw rice
    • 1 tablespoon cooking oil
    • 1 teaspoon mustard
    • 1 teaspoon cumin
    • 4 dry red chili, torn into halves
    • 1 teaspoon Grated ginger
    • 2 medium onions chopped
    • 6-7 curry leaves
    • 1 teaspoon corriander powder
    • 1/2 teaspoon turmeric powder
    • 4 medium tomatoes, chopped
    • salt to taste

    1. Steam rice and keep aside.
    2. Heat oil in a deep pan. Add mustard and let splutter. Now add cumin, red chili, ginger, onion and curry leaves.Saute till onions are golden brown. Now add corriander powder and turmeric powder. Saute a few strokes and add tomatoes and salt and let cook until tomatoes are well cooked.
    3. Now add rice and mix well without smushing up the rice.
