    About this recipe: This dry veg curry goes well with rotis and rice. Cooking capsicum with spinach gives this preparation a unique flavour.

    Ingredients
    Serves: 4 

    • 1 tablespoon Cooking oil
    • 1 teaspoon mustard
    • 1 teaspoon Urad dal
    • 3 dry red chili torn into halves
    • 2 medium Onions, chopped fine
    • 2 medium Capsicum, chopped into chunky cubes
    • 5 cups Fine chopped spinach
    • 3/4 teaspoon Turmeric powder
    • Salt to taste
    • 1/4 cup Grated coconut

    Directions
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat oil in a cooking pan. Add mustard and let splutter. Add urad dal and red chili. Roast well and add onions . Saute till tender..
    2. Now add capsicum and saute until it loses its crispiness.
    3. Now add spinach, turmeric , salt and let cook until almost all water from spinach is used up . When done, stir in coconut and turn off the flame.
