Pull out only the white portion of the flesh from the kernel and cut up into thin long strips.
In a pot put in the sugar and 1/4 cup of water and let the sugar dissolve. Once the sugar dissolves add the coconut strips and cook on slow flame. Keep on stirring to make sure it does not stick to the bottom.
When the mixture starts to leave the sides and starts to thicken, remove with a fork and put the strips into little heaps on the wax paper. You have to work fast as the strips harden when removed from the mixture.
Let cool and peel from the paper. They look like little nests.
