About this recipe:
A wonderful, light salsa recipe with olives, onions and garlic. Best served with chips, or as an accompaniment to tandoori chicken.
180g tinned artichoke hearts, drained and chopped
3 large tomatoes, chopped
2 tablespoons chopped red onion
4 tablespoons chopped black olives
1 tablespoon chopped garlic
2 tablespoons chopped fresh basil
salt and freshly ground black pepper to taste
- In a medium bowl, mix together all ingredients. Serve chilled, or at room temperature, with tortilla chips.
This is absolutely scrumptious! I added green olives, chopped jalapenos to spice it up for my family and made homemade tortilla chips. Great for an appetizer or with Tandori chicken!
