About this recipe: A wonderful, light salsa recipe with olives, onions and garlic. Best served with chips, or as an accompaniment to tandoori chicken.

Serves: 5 

  • 180g tinned artichoke hearts, drained and chopped
  • 3 large tomatoes, chopped
  • 2 tablespoons chopped red onion
  • 4 tablespoons chopped black olives
  • 1 tablespoon chopped garlic
  • 2 tablespoons chopped fresh basil
  • salt and freshly ground black pepper to taste

  1. In a medium bowl, mix together all ingredients. Serve chilled, or at room temperature, with tortilla chips.
