About this recipe: Grapes are famous for cooling down the body and are great for overactive people. I always make it for busy weekends because it's very quick and easy to make.

Serves: 8 

  • 600g seedless grapes
  • 2 tablespoons finely chopped parsley
  • 250ml fresh squeezed lemon juice
  • 1 tablespoon lemon zest
  • 2 teaspoons honey
  • 500ml grape juice
  • 3 tablespoons honey
  • 5 tablespoons mayonnaise
  • 4 tablespoons freshly squeezed lemon juice
  • water, as needed

  1. Put the grapes in a medium sized mixing bowl. Sprinkle some chopped parsley on the grapes and then pour in 250ml of freshly squeezed lemon juice. Mix them all together with a wooden spoon. Also add lemon zest and 2 teaspoons of honey for flavour.
  2. For the dressing: pour in 500ml of grape juice into another bowl. Put 3 tablespoons of honey and 5 tablespoons of mayonnaise along with the remaining lemon juice. Add a little if the dressing is too thick. Mix together.
  3. Pour the grape dressing over the salad, toss and serve cold.
