About this recipe: An Italian classic, this is a fast and easy starter that's colourful and delicious. Fantastic for parties or elegant snacks!


Serves: 12 

  • 1 French bread baguette
  • 2 tablespoons olive oil
  • 350g jar roasted red capsicums, chopped
  • 3 cloves garlic, chopped
  • 1 tomato, seeded and chopped
  • a bunch fresh basil, chopped, (quantity to taste)
  • 1 red onion, chopped (optional)
  • 3 teaspoons balsamic vinegar

  1. Slice bread into slices about an inch thick. Brush each slice on one side with olive oil. Heat your tawa to medium to high heat. Toast each French bread slice till well done. If you'd like to bake instead, preheat your oven's grill.
  2. Grill bread, oil-side up, until just golden. Remove and cool.
  3. In a medium bowl, mix together roasted capsicum, garlic, tomato, basil and onion. Sprinkle mixture evenly on each toasted slice. Drizzle with balsamic vinegar. Serve immediately.
