Mango Salsa Salmon

    Juicy Salmon steaks are topped with mango salsa. If you can't find fresh salmon, use frozen ones or feel free to use the fish of choice.

    Serves: 4 

    • 4 170 gms salmon steaks
    • 3 tablespoons olive oil
    • 1 large red onion, diced
    • 2 cloves garlic, peeled and minced
    • 2 tomatoes, diced
    • 1 sprig fresh coriander, chopped
    • 2 mangoes - peeled, seeded, and diced

    1. Cook salmon steaks in a pan on medium to high heat for 12 minutes, or until easily flaked with a fork.
    2. Heat olive oil in a pan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and coriander. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangoes. Serve over the salmon steaks.
