For a change from the usual spice heavy chicken dishes, have soya sauce and apricot jam make a tasty glaze on the chicken. You can also try orange marmalade instead.

Chicken, nuts and apricots flavoured with tangy fresh basil make a refreshing summer-style stir-fry. Serve with rice noodles or fluffy white rice for a healthy meal in moments. Delicious!

Bring the flavours of the Meditarranean home with this dish- chicken baked with artichoke hearts and black olives in stock. Serve with crusty bread to mop up the delicious juices.

In SE Asia, there are different kinds of 'noodle soups'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the tender onions as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. Add chopped hot chillies or dried chilli flakes to make the soup spicy.

An excellent dish for spring time. Boost your daily vegetable intake using bright, fresh baby corn, sweet peas and red and yellow capsicums in a healthy meal that's as colourful as it is tasty – and it cooks in dus minute! Delicious!

Beautifully spiced and simmered with almonds and cream, for me this is an unforgettable party dish. Just have pulao and Peshawari naan ready for the crowds who will fall for it!

I love Chettinad food. The gravy is very peppery and flavourful and goes very well with plain rice and papad on the side.
