Mirchi Meat Rolls with Raita

Cucumber and dahi provide a cooling contrast to flattened pork (escalopes) rolled around a hot, ginger-spiced stuffing. Try serving with boiled rice and steamed french beans. To make escalopes: Cut pork fillet into 3/4 inch slices. Place a piece of sliced pork or a chop on a sheet of waxed paper or plastic wrap, cover with a second sheet and using a belna (rolling pin) or meat mallet, flatten to a thickness of about 1/4 inch.
Raita
Raita is a kind of cucumber salad that is eaten with Pulao and all kinds of Biryanis. It is really light and must be made right before the rice is served.
Boondi raita
Boondis are small balls of sweet besan which are mixed with seasoned yoghurt to make this delicious yet simple salad. Serve with chapati or rice.
Vegetable raita
This is a quick and easy salad that you can wrap in a chapati or just have with rice, especially when you do not feel like cooking something heavy. The salad should be eaten fresh and chilled.
Vrat ka Raita
This is a raita made during Navratri to go on thali that is served to break the fast. Serve with puri and other vrat food dishes.

This is a bit different raita, as it is made from lauki or bottle gourd. It is a Navratri special salad item.
